New distilleries need a source of revenue while they wait for their own stock to mature. Besides making gin and selling casks of spirit the Glasgow distillery company has also secured a number of casks with aged stock from an undisclosed Speyside distillery which they now release on a yearly basis. The plan is for the final release to be a 30 yo whisky. So let’s take a look at the 27 yo, their second release, which has been out for a while now. I had a chance to try it at a company presentation in Speyside this year and also got a sample to take away for an in-depth review.
On the nose you can immediately tell the fresh European oak sherry casks this whisky was matured in. Spicy notes in the foreground – Cinnamon, allspice, cloves, dried orange peel – almost like a spice mix used for mulled wine. Speaking of wine, there are also dry tannins, but not too much. The background layer is formed by notes of dark bitter chocolate, fresh leather shoes and a dark, moody, condensed, slightly burnt dark fruit component (plum spread and figs for the most part). How fitting! A 24 yo single malt whisky to conclude the 24 drams till Christmas series! This better be a good one for a great finish or I’ll have to extend it to 25 days… The nose starts off slightly alcoholic but there’s greatness underneath! Classic European oak sherry cask matured whisky – post Paxarette! Spices up front – cloves, cinnamon, allspice, nutmeg. The cask is strong with this one (excuse the Star Wars pun…), no oaky notes, just letting the spices talk. The nose opens with quite a bit of alcohol and the signature meaty notes of sherry-matured Mortlach. I think last year’s bottling was a tad richer if I remember correctly (and re-read my tasting notes on that one). Let’s give it some time. *tick tock tick tock*. Well, as meaty as they come. Influenced by old european oak sherry casks too – leather, dampened spices, grandma’s old wardrobe (but in a good way), caramel, semi-dark chocolate and old ginger root. The nose opens with vanilla and light, continental fruits – sweet red apples and ripe pears. Also sweet honey melon, light honey, banana chips, vanilla pudding and a slight layer of oak in the background to round things off. Not the most complex nose, but a nice, well-aged refill cask.
